In a meeting that honors tradition and projects the future of Mexican gastronomy, the renowned chef Carlos Gaytán visited the Casa Concheros restaurant on July 18, where he was received by its owner Israel Soriano. During his stay, Gaytán had the opportunity to meet and taste a six-course culinary proposal, based on local ingredients and paired with Querétaro wine labels.
Chef Gaytán, the first Mexican to obtain a Michelin star in 2013 for his restaurant Mexique in Chicago, and current holder of a second star for his restaurant Ha' at the Xcaret Mexico hotel, expressed his admiration for the work of Casa Concheros in the preservation and projection of traditional Querétaro cuisine.
"I am excited to see places like Casa Concheros, where regional cuisine is honored with creativity, respect and identity. What they are doing here is worthy of recognition and of being shared with the world," said Chef Gaytán.
During the experience, the chef was treated to a menu specially designed to showcase the gastronomic richness of the state:
• Dried Huasteca jerky with creamy avocado with serrano pepper and garambullo sauce
• Arriero's toast with cured nopales, fresh cheese and tantarrias
• Chickpeas in yellow
• Chicated sweet potato with rabbit barbecue and pasilla sauce with pulque
• Guava roll with roasted provolone
• Guamiche sorbet with mezcal
Israel Soriano, host and creator of the Casa Concheros concept, shared with the chef the restaurant's objective: to preserve and reinterpret the flavors of the center of the country, especially the Querétaro territory, and link them with local wine as an essential part of the culinary experience.
The meeting was not only an exchange of flavors and knowledge, but also the beginning of a collaboration. Chef Carlos Gaytán announced that he will be working hand in hand with Querétaro to develop a joint gastronomic experience that strengthens the culinary identity of the state and projects it internationally.
With humble origins in the United States, where he started washing pots and dishes, Carlos Gaytán has managed to become one of the most influential Mexican chefs in the world, always maintaining his commitment to excellence, innovation and pride in his roots.
