These are new times, the generations that prepared it, says 'Yeyo' Peñaloza -cantinero from La Norteña-, have died and the original recipe is being lost more and more. In the Don Amado canteen (May 5, 116) is still served for anyone who wants to use its attributes between music, atmosphere and snacks. The same thing happens in the popular neighborhood of La Cruz, where one of the most famous canteens in the city is located. El Faro has the oldest alcohol license in the capital and stands as a pioneer of the prodigious (it continues to be served), the sisters Margarita and Amalita prepared it in an artisanal way more than 50 years ago.
Outside the Queretaro capital we can also drink the bitter, in the traditional cantina the concord, located in the main square of the center of Amealco de Bonfil, the prodigious drink is taken with a touch of sweetness, similar to anise, but without abandoning its origin of herbal liqueur, familiar with home remedies or liqueurs such as fernet.
