Anyone who has ever set foot in a Mexican kitchen knows that food is not only consumed and enjoyed for the sense of taste. Aromas, colors, sounds and textures are a fundamental part of the history of the most varied and famous Mexican dishes.

 

The Sayil Centro Histórico restaurant, characterized by its fine detail in Yucatecan gastronomy creations, carried out a sensory tasting in collaboration with Mezcal Monte Lobos. This event served to celebrate the first anniversary of this emblematic place.

Mayan mythology accompanied the pairing tasting at all times. The atmosphere enveloped those present; From their arrival they were received by a ceremony in which they were anointed by essences. Every corner of this site has pre-Hispanic elements that force those present to move, to extract themselves and surrender at the moment.

To begin the ritual, those present opened their throats with a tasting of Monte Lobos mezcal, this served to relax the senses, break the ice at the table and to be delighted with a Mexican drink of quality and tradition.

They were blindfolded with the intention that the dishes and ingredients they would receive throughout the tasting would be perceived with smell, taste and touch, thus avoiding the semblance that sight produces before foods that are already known visually.

 

At all times the aroma was impregnated by incense, in addition to the flavors that floated in the air. The sound of the snail, so characteristic of pre-Hispanic cultures, sounded at the Sayil Centro Histórico restaurant to announce the arrival of new dishes on the tables.

The stimulation of the senses caused a trip through the Yucatecan lands. The table was a coming and going of ingredients that, literally taken with the hands of the diners, were exploded to provoke various emotions in those present.

 

The lime soup, the salsa macha, the cochinita pibil and an endless number of traditional dishes were presented in various ways to stimulate the palates. The accompaniment of mezcal in various cocktails was also an element that encouraged those present.

Through the corridors of Sayil Centro Histórico there was an atmosphere of ritual, the one that has occurred in Mexican kitchens since before the Conquest and that today continues to be an essential part of the local culture. Rituals with smoke, with incense, with herbs, with fire, that's the Yucatecan cuisine, the Mexican cuisine, that's the cuisine of Sayil.
