Santa Marina is an agroecological ranch for rural and regenerative tourism where experiences are offered to bring visitors closer to the natural processes of production of goat, sheep and cow cheese; in addition to the production of natural wine, with biodynamic methods. These characteristics make Rancho Santa Marina a great tourist proposal with a unique and high-quality experience.
The development of Santa Marina is governed by three main values: social sustainability, animal welfare and environmental sustainability. Under the premise of the first value, the ranch promotes the generation of sources of employment for the most vulnerable sector of the area, they hire mothers from the community of San Rafael, they provide flexible schedules and if necessary they modify the operation of the ranch to be able to include their collaborators.
On the other hand, on the subject of animal welfare, Santa Marina has enough space, water, food (as natural as possible) and alternative medicine days such as: homeopathy, herbalism and essential oils; all in order to provide a dignified life to each of the animals that make up their farm.
Likewise, for environmental sustainability, they work with a regenerative agricultural production model, which recovers and preserves the natural diversity of the land, respects animal life and defends inclusive employment with the aim of contributing to the region's productivity in the long term.
It is important to highlight its specialized production, such as the production of its cheeses, which begins under the knowledge of its master cheesemaker: Lola Olguín. Their goats, sheep and cows maintain a free grazing in broad-leaved meadows, tender grasses and herbs (quelites, purslane, clover, mallows) that are part of the amaranth family and are rich in omega 3 and 6, thus obtaining the best possible quality milk.
On the other hand, wine is produced through organic and biodynamic agriculture, alternatives that work better in order to obtain more balanced, healthy and productive vineyards, which translates into better quality grapes and, therefore, healthier, more unique wines with better character.
In turn, the ranch works with a model of biointensive gardens, which arise as a need to respond to the demand for healthy food for a population that is growing and as a solution to the problem of soil loss and deterioration.
These orchards function as a production system without machinery, fertilizers or commercial insecticides, to avoid damage to the environment and health.
La Ordeña, Honest Cuisine.
Of course, all of the above is reflected in a space designed, thought and adequate for the enjoyment of life, the celebration of food and paying tribute to those processes that nature offers us. La Ordeña is Santa Marina's restaurant, a place where all the hard work of the ranch is assembled and exalted. The restaurant's philosophy is based on nose to tail , which reflects a vision to achieve the integral use of animals.
At Rancho Santa Marina, the animals live in free grazing, they are fed with pastures that have grown slowly and naturally and are the basis of the philosophy of its chef, Julián García, who seeks the total use of proteins, to offer a unique, high-quality experience that guarantees the well-being of the animal and its integral use.
Similarly, in their store you can find all the products they make on the ranch, as well as some other brands with the same responsible philosophy. The store is a must-see when leaving Santa Marina, but it is also a recognition of the dignified life, nature and talent of Querétaro.
