After more than six years of making fresh cheeses under the Quesos Néole trademark, Cava Bocanegra has set itself the challenge of also making matured cheeses, learn about its history.
After six years of experience with her brand, Néole decided to venture into the market with cheeses of other aging characteristics and of high quality in order to compete with imported cheeses.
They knew that it was essential to have an adequate space for their maturation process. This need inspired the construction of an underground cellar which they named Cava Bocanegra, today a benchmark in the production of artisanal cheeses in Querétaro.
In their cellar they refined cheeses of very different flavors, textures and maturation times. All of them based on traditional recipes of European origin, but with the personal touch that they have developed over the years, which makes them authentic "signature cheeses".
On the other hand, its modern and comfortable facilities are designed to receive visitors and groups, they have a team of professionals whose purpose is to attend to people who visit Cava Bocanegra and thus share everything related to the production of their cheeses and the maturation processes.
At the same time, they offer to guide visitors in the tastings of their sophisticated and designed cheese boards, which they can accompany with different pairings of wines and craft beers from Querétaro.
You can also enjoy its restaurants, such as Gastronómica, located at the top of the cellar, a gourmet space, where the protagonists are the landscape, the different dishes made in the most artisanal way possible from their own breads, bacon and the wide variety of Néole cheeses.
Just like the Deli restaurant, next to the cava building, it is a place that seeks to provide a more relaxed experience and with simpler dishes, but without leaving the best standards of quality, freshness and flavor.
