The Biosphere Reserve, that natural region with unique species in the world, has something more to offer its visitors; in addition to the natural landscapes, the rich missionary history, the climatic variety and the trails to get lost in, it has a route, but it is not just any route, it is the Ruta del Sabor.

Under the initiative of Sierra Gorda Ecotours, 14 years ago the Ruta del Sabor was inaugurated, the intention was to rescue the traditional mountain cuisine and make it available to tourism. Those who venture to travel the roads of the Sierra Gorda could discover in unsuspected places unique dishes, traditional fondas, home food.

The aroma of firewood announces that you are going to enjoy food different from what you are used to in the city. The stoves bring the family together, they make us feel that a moment is coming to surrender to the pleasure of food. When touring the Sierra you are in constant amazement, arriving at the fondas of the Ruta del Sabor means prolonging that amazement to the table.

The objectives pursued by this famous route are, among other things, to rescue the most traditional gastronomy. In the words of the people who form it, they use ingredients, vegetables, and foods that the Sierra soil itself offers them. The initiative included improving the conditions of the food stalls or restaurants, helping to build better areas to offer to their diners; mainly with techniques that favor the environment, such as constructions with neighborhood or with materials that do not damage the ozone layer.

By creating this network of food stalls and shelters, and giving it an identity as the Route of Flavor, tourism promotion increased and momentum was generated; giving priority to conscious tourism, as promoted by Sierra Gorda Ecotours.

There are 13 food stalls that currently form part of La Ruta del Sabor. In them, tourists can find dishes as varied as roasted eggs, stewed pork, red and green scramble, enchiladas with dried meat, among many other options.

Each establishment has a story to share while enjoying the food, and of course an unmissable cup of coffee.

In Doña Chole's fonda, for example, they prepare delicious wood-fired roasted eggs, a traditional dish that has survived for more than 40 years in this region.

Just a few minutes from the main garden of Jalpan de Serra you can enjoy the dishes that Doña Irinea has for you in Comedor Conchita. The green scramble is a gastronomic jewel of the region.

You can find the same on the route to Puerta del Cielo, in Pinal de Amoles, the famous fonda La Cabaña, an emblematic site with more than 15 years of tradition on this route. You can enjoy traditional stews, quesadillas, sopes, huaraches, delicacies that delight travelers who make mountain routes.

The fire calls, the hot coffee invites you to start the day with a breakfast full of organic, healthy, natural foods. This is how to travel the roads of the Biosphere Reserve, enjoy sunrises or sunsets while enjoying a good chat and savoring an old recipe.
