Valentina Garza is passionate about wine and everything surrounding it: its production, distribution, the world of viticulture, the people behind the vineyards, and the projects that arise from its production and consumption. Above all, she is passionate about the constant learning that this vocation implies, which is why she has served as Director of the Altiplano Wine School (EVA) since 2014.
The Altiplano Wine School -EVA- is a non-profit civil association that aims to promote wine culture through education. Valentina, who is also a member of the institute, found the ideal place to share her passion in Querétaro. After studying Humanities focused on oenology in La Rioja and completing her specialty in Burgundy as a sommelier in wine tourism, she had the opportunity to be amazed by the semi-desert region and thus begin her career in the Querétaro wine industry.
For Valentina, the most exciting thing about wine is sharing knowledge, and she points out that in Querétaro, the most rewarding thing is that all the producers with a project in the region are very clear that "unity is strength," which makes the state an example of collaboration. "We are recognized for being the most united region in Mexico, and that is a great source of pride."
"Querétaro wine, without a doubt, is effervescent, it is booming (...) Little by little we have been positioning ourselves in Mexico," Valentina tells us when we ask about the Querétaro wine industry. Despite the peculiar climate, the type of soil, the altitude above sea level, and the fact that making wine in Querétaro is considered a type of extreme viticulture, the Altiplano Wine School tries to support wine tourism projects and dedicates its work to promoting the creation of vineyards by providing support and advice to anyone who requires it.
In addition to being the only wine school in Mexico, EVA is characterized by training field producers free of charge and altruistically to make them fall in love with the vineyard they are planting and feel proud when a Querétaro wine receives a medal, and its ultimate goal is the growth of the industry so that anyone who is interested knows how to invest in the wine industry.
Valentina Garza and EVA, the school she directs, have become a nationally recognized platform for learning about Mexican wines. Promoting successful wine and wine tourism projects is what makes this association a success. Because "here the universal language is wine."
