Vatel Club, raising the name of Querétaro cuisine

When we talk about gastronomic associations of great history and prestige, undoubtedly the most important in Mexico is the Vatel Club that emerged in 1993, at the initiative of Chef Olivier Lombard.

Since its inception, the association has followed the motto "Sowing to change", of its founder Olivier Lombard Guillot, who in 1992 started this project with the interest that members of the industry work to value and ennoble their activity.

In this sense, Vatel Club seeks to promote quality gastronomy – particularly Mexican – with the support of all the members in the different national and international forums that have been opened, without neglecting the actions of social benefit that aim to promote the Mexican countryside.

It currently has 400 members throughout the country and Querétaro has its own chapter that is made up of 12 professionals led by its President, Chef Aarón Chávez Torres, the board of directors made up of Sommelier Adriana Castro and the Treasurer, chef Carlos Hugo González, who together with their other members have their space in the guild, they serve as leaders in restaurants, university academics and entrepreneurs in the state.

From their trenches, they have taken on the task of promoting Querétaro's gastronomy with different events and alliances that seek to share and promote local consumption.

Among the activities are the Gastrouniversitario contest where it seeks to promote and preserve the culture of Querétaro gastronomy, in addition to projecting the talent of future kitchen professionals in the state.

Another event is the Picnic that brings together more than 100 chefs and families from all over the country, where the culinary wonders offered by our lands take center stage; likewise, Vatel Club Querétaro is also in charge of organizing Querétaro Dinners, an event where only dishes of the entity are prepared with endemic and local products, accompanied by wine from the region.

It is important to mention the participation and incursion that Vatel Club Querétaro has in society, which is why on the last Tuesday of each month they carry out an altruistic work in which family and friends volunteers participate to share food, clothing, experiences, which are taken to hospitals, nursing homes, children's homes, communities and vulnerable groups. this year, for example, they are in constant visits to children with cancer from the Pingüi family.

Vatel Club Querétaro and its president, Aarón Chávez, know that there is still much to do, the work never ends and they are clear that the objective is to move forward with the creation of more spaces and forums where gastronomy, brotherhood, art and the pride of being Mexican converge and serve as a platform to create new and better opportunities for the kitchen sector in Querétaro.
