Viñedos del Polo not only produces good wine, it is also a first-world residential development, the place where the best polo is played and is one of the closest vineyards to the capital of Querétaro. But in addition, he has his heart in Rebenque, a restaurant that on August 13 and 27 celebrated its harvest festival in a very symbolic way: with a country barbecue.
Arriving in Rebenque is like coming home. The good food, the atmosphere, the atmosphere, the polo field in sight at all times, its wines and above all Nacho Ávila, its chef make you feel welcome and make your experience memorable, something that you want to repeat and recommend to as many as you can to live it too.
A barbecue among friends.
This vineyard offered a country experience, petit, for no more than forty people, in which wine was lived, the meat was enjoyed, the smell of firewood, the conversations between the fire with a glass in hand, the noise of the embers and the saxophone that accompanied the experience. An afternoon where families enjoyed, took photos, stomped grapes and the little ones enjoyed the games.
In addition, this meal was accompanied by tours. Thus, the most curious were able to get to know the vine fields and the cellar of Viñedos del Polo on a tractor and in the company of a guide who told them about the production process. On this tour they were able to learn about the magic of making wines in Querétaro, the variety of grapes, their development and the process that is carried out to make the three red wines, rosé wine and white wine that characterize this vineyard and that were the perfect companion for the barbecue that Nacho Ávila, chef of Rebenque, prepared for his guests.
A meal that had its preparations from dawn with Nacho attentive to all the details, setting up the fires and lighting the fire, a fire that for almost ten hours cooked 20 kilos of ribs, 15 kilos of pork, vegetables and cheeses.
The menu consisted of choripan in brioche petit, provoleta from Tequisquiapan, sweetbreads in Creole sauce, Rebenque-type salad with parmesan slices and a balsamic reduction, grilled vegetables, pig on the cross and ribs from Hacienda los Fonsecas, all made on the spot with products one hundred percent from Querétaro and of the highest quality. The dishes were accompanied by the Roble red wine from Viñedos del Polo. For dessert, the guests were able to taste three types of alfajores that closed this magical afternoon with a flourish.
This Uruguayan barbecue – like its chef who has been in Querétaro for eight years – was distinguished by enjoyment, joy and laughter. A very different proposal, of great value, which adds to the celebrations that the Art, Cheese and Wine Route have for you in this time of harvests.
