It is a gastronomic festival specialized in promoting and disseminating the culture of artisanal cheese made in Mexico, its production techniques, the diversity of products and their consumption; unique in its concept and the first event where the State Artisanal Cheese Contest is held for the second time.
Why Cava Bocanegra?
After more than 6 years making fresh cheeses with their commercial brand NéOle cheeses, they set themselves the challenge of making matured cheeses, however, when they realized that if they wanted to venture into this market of these characteristics and high quality they had to have an adequate space for their maturation process.
This need inspired them to build an underground cellar for what is now Bocanegra cellar.
In the cellar, cheeses of different flavours, textures and maturation times are matured and refined. All based on traditional recipes of European origin, but with their personal touch, which makes them "signature cheeses".
To make your visit more pleasant, they have modern and comfortable facilities, with professional equipment whose purpose is to attend to the people who visit and share everything related to their cheese making and maturation processes with tastings of cheese boards that can be accompanied by different pairings of wines and craft beers from Querétaro.
La Biquette
It is made up of a group of professionals dedicated to the study and production of milk and goat cheese.
Their cheeses are made by hand following the French tradition, resulting in creamy cheeses with a firm consistency.

La Gastoreña
It is located in the municipality of San Juan del Río in Rancho Santa Cecilia. There, on the ranch, goat's milk of different breeds is produced and milked.
They currently have Anglo-Nubian and French Alpine breeds. Mainly the cheeses that are made are fresh French type spreadable, but there are also lactic paste cheeses with mold that take a maturation of approximately 14 days.

It is a family business, 100% Mexican committed to nature, looking for alternatives to live in harmony with the environment, its cows grow happily and live free in cultivated pastures without fertilizers and chemicals.
Its products are made with pure milk from Jersey cows, contains a high level of calcium, proteins and has a wide variety of bacteria (lactobacilli) that help to have better digestion and strengthen defenses.

Pradales
The ranch began in 2001 with the arrival of the sheep who dressed the meadows with clouds, the flocks were growing and it was not until a trip in search of new illusions was reached where a cheese made from sheep's milk was tasted for the first time, it was there where Monica H Alcocer with the help of her father Federico H Alcocer made the decision to start making a product that they could Obtaining from sheep's milk, the wonderful cheese, it was then that the journey of learning and evolving in the world of cheese began, which until now remains a great adventure.
All our cheeses are cheeses that undergo a maturation process and what differentiates them from each other is the time spent in the cellar; They are totally artisanal cheeses.
Our cheeses are made only with the milk that is milked from the local animals so they stand out from other products in their consistency, flavor and above all in the process where nothing more than the best sheep's milk is added.
