In a new edition of Michelin Chefs Meets Querétaro, art, gastronomy, and lifestyle converged again and now they were seasoned with a very Mexican tradition: the Day of the Dead.
The Hacienda Lagunillas was the venue for a new edition of the Michelin Chefs Meets Querétaro galas, the situation could not be more Mexican and with more mystique. The smell of marigolds, incense and stoves took over the atmosphere on a typical autumn afternoon.
Those present enjoyed a catwalk of catrinas, the typical color of the festivities of the faithful departed starred in the beginning of the dinner. 'A trip to heaven' was how this parade was baptized, which dazzled with the elegance and artistic realization of the costumes.
The protagonists of the night were Angelita Esparza and Álvaro Sanz, who gave life to the dishes that were served during dinner. Angelita is a traditional cook from Querétaro from the community of Villa Progreso, in Ezequiel Montes, a place that is distinguished by its ancestral food. Chef Álvaro, on the other hand, has a Michelin star and has developed in the Mediterranean Sea region, from where he draws inspiration for his creations.
To whet your appetite and start enjoying the best of Querétaro's cuisine, a muleteer's toast with rabbit in green manzada mole and fresh cheese was served. A dish that featured elements of the semi-desert of Querétaro.
Secondly, those present enjoyed pickled Mediterranean vegetables with Foie gras sauce, a proposal by chef Álvaro Sanz. In the same way, he presented beans from Tolosa and Biscayan-style pig slaughter.
Finally, a crystallized nopal stuffed with cottage cheese with walnuts, crystallized xoconostle stuffed with goat cheese and pine nuts, served with garambullo honey, a dish with all the Querétaro touch, was served.
The dinner featured a wine pairing from the region, as well as national and international spirits, as well as cocktails.
Art was also present, pieces from the Juan Carlos Gallery were auctioned, which benefited the National Institute of Anthropology and History.
