Located in the semi-desert area of Querétaro, and two hours from the capital of Querétaro, is a small municipality called Peñamiller, with a population of approximately 17 thousand people, this place has been characterized by having a very distinctive dish from the others, made with products from the countryside, and unique to this region, the taped goat is born.
We entered the kitchen of Mrs. Sara Camacho, where together with her daughter and granddaughter Sol, they told us a little about this famous typical dish of Peñamiller, where they are from, which was very common to give at parties to the guests, however apart from being a delicious dish, carrying it out is somewhat expensive.
We accompany Sara throughout the preparation process, where with a couple of ingredients, such as ancho chili, a clove of garlic, a pinch of cumin, apple cider vinegar, oregano and salt to taste, this is combined and ground in a molcajete, to create the goat sauce, when it is already available, It is added little by little to each of the pieces of the goat, along with a handful of salt.
Then each of the pieces is delicately introduced into the clay pot, where together with maguey leaves, previously burned, they are placed one by one inside the pot, closed, finally the lid is sealed with a little corn dough, and left for a day, so that a better flavor is impregnated in each of the pieces.
And finally, the pot is put in the heat of the embers on the grill to be cooked, and with a couple of hours, the goat tapeado marinated in sauce, with a good pulque and accompanied by broken corn gorditas, is ready to be tasted by the diners, and your guests. Sara told us that this dish had a tradition by the hand, that the biggest man at the party was the right one to be the first to open the pot.
