The most awarded cheese factory in all of Latin America stands proudly among Mexican lands, working day by day so that Querétaro cheeses have nothing to envy to the world. It is Rancho San Josemaría, a family business dedicated to the production of artisanal cheeses based on sheep's milk.
Located just 30 minutes from the city, this family ranch has dedicated its efforts to the quality of its flavors and textures, which has been recognized in countries such as Spain, Italy and Norway, earning a total of 11 medals, distributed among nine of its cheeses, in one of the most recognized events in the world: World Cheese Awards.
Some of its most famous cheeses bear in their names the Otomi legacy, such is the case of Churrinche, a cheese with light notes of butter and walnut that bears the name of a bird with an intense red color and black wings; or Däbehé, one of its most awarded cheeses, which means winter.
At Rancho San Josemaría, sustainability is key to its success, carrying out 100% self-sustainable production and the first step for this begins with sheep farming. Taken care of under animal welfare standards, these animals are fed a comprehensive diet, with ingredients such as corn and alfalfa.
The ranch has 350 East Friesian dairy sheep, which are milked with an automatic system that allows them to collect up to 600 liters a day, preventing the animal from being stressed and the collection efficient.
The sheep are sheared twice a year and, through a social program with the community, the wool is exchanged in Coroneo for wool thread or yarn, which are then worked by artisans to create products such as small figures of sheep and rugs, later offered for sale on the ranch.
