


Since 2001, Pradales, the ranch of Monica and Federico H. Alcocer has grown from the arrival of their sheep, and after experimenting for the first time with sheep's milk cheese, they began the artisanal production of unique cheeses, made from the milk of their animals and differentiated by their maturation process, ranging from fresh to matured with wine or ash. These cheeses are distinguished by their authentic flavor, unique texture and the care taken at each stage, from the rearing of the sheep to the maturing process in the cellar.
