Know the process of ripening cheese
On the shores of Tequisquiapan, is Cava Bocanegra, a project that began with the producers Néole, when they decided to venture into the maturation of their cheeses and create a space suitable for it.
The enclosure is divided into two experiences, the first referred to the cheese cellar, and the second directed to the restaurant where they serve dishes made with their best ingredients.
In the Cava located at a depth of five meters, you can have a guided tour where they explain the types of cheese they handle and how the process of maturation is, which can go from three months to a year.
In addition to a detailed explanation at the end you are given a tasting of six varieties of cheese. Three of them are fresh, which can be fine herbs, chihuahua chipotle, blueberry and walnut chihuahua, or some other of their options; the other three cheeses are matured, you can try one that has been immersed in wine, another where its maturation time was one year, and a last one bathed in axiote, to give some examples.
All of them are accompanied by olives, quince jelly, honey butter and pieces of fruit; and if you wish, you have the option of pairing them with mezcal, craft beer or wine from the region.
The restaurant on the terrace, in a simple and rustic style, sets the scene for the distant Peña Bernal and the extensive fields that change color with the seasons. Here the cheeses are served in delicious dishes such as hamburgers, pizzas, salads and snacks.
We suggest you open your appetite with a Provenzano Asado, then try their Serrano Pera pizza, of Serrano ham with pear envinado, or their BN hamburger of caramelized onions and melted mature cheese; and for dessert an exquisite Matured Cheese Flan.
This place is excellent to spend a good time with your family, friends or partner, and even with your pet, because it is a pet friendly space. There are tours every hour, however, we suggest making reservations for large groups, especially if your visit is on the weekend.
